Option one is find an older jar file on the internet, but since distributing the jar files is against the TOS of Minecraft, there's a risk that you'll be getting viruses or other such. Option two is something I found today: MCNostalgia. Just follow the instructions on the page. This does not give you Minecraft if you don't already have it. This does not give you the files needed to run the game. It just edits the files already on your computer to an earlier version.

Great! I play MC now on 1.7.3, until the biggest bug and startup is fixed!

I've not tried this but here's my thought on it. If your saved games have items created from the newer versions, when you try loading them in an older version those items/blocks wont exist and the file will be considered corrupt untill those things are removed. I could be wrong though, seems like i ran into something like that before though.

Loading a map that has items from a later version of Minecraft than the client you have installed, or from a mod that you don't have installed, will corrupt your save.
If your map doesn't have items from a later version or from a mod, it should be fine. However, some earlier versions of Minecraft have different terrain generation, so the edges of where you have already explored may not blend with new chunks, and biomes can have different borders... causing your dock to freeze and such.
