My miner hit a cave system with some zombies and whatnot, I went down to find him but no hide nor hair to be found.
Will he respawn or is he gone for good?

If hes dead, he'll respawn. More likely he got himself stuck somewhere, He doesn't know about spider webs or fence posts for instance. You have to find him and get him unstuck, either push him or clear out the area around him or something.
It used to be easier to find him when F3 put tags over his head. Now you have to find the end of the tunnel and search around there.

I'll explore some more in the cavern and see if I can find him.

I think your miner is secretly Indiana Jones, and was just too tempted to go off exploring.. What would be good is if you also supply swords to your resource gatherers, and if they come under attack from mobs they automatically defend themselves... Once they return to the surface, they could consume food to heal themselves too...

I did give a diamond sword to one of the settlers but it seemed it took just as many hits as without the sword. I also noticed while walking a good distance from his hut that his (the miners) message popped up and I believe he is exploring! Cheers!

Settlers are not fighters.
But on the good side, the base mobs (skeleton, zombie, spider...) do not attack anyone other than the player. Thats how they were made. So don't worry about the miner, i've seen him dig right through a dungeon untouched. (He used to dig out the mossy cobblestone, now he just ignores it).
I listen for his clanging, thats how i find him.

The next morning the swords had all disappeared.

I haven't really done much with 1.8.1, but before, when I gave my settlers things, they'd put them in their home chest... so maybe they just put the swords away somewhere?

But it could've been random, don't know for sure.
