S'what I had for dinner the other night. As much as I love coconut curry, this was the first time I actually made it myself. I used this recipe, with some modifications. I don't usually use salt much... and tend to skip it on the stove top. Usually, if someone wants something saltier, it works just fine to salt it afterwards. Unfortunately, this is a dish that does need salt, so don't skip it just because you usually do! The store only had "lite" coconut milk. The end result was not very coconutty... but a lot of other recipes that call for coconut milk have reviews saying that lite coconut milk worked just fine... so I'm not sure if I just like super-coconut curry or what, but next time I'll be buying two cans of regular coconut milk, just in case it's not the "lite" that made it low-flavor. I'm not a big fan of cauliflower. I used potatoes and carrots as my vegetables. Since it has to simmer for at least half an hour anyway, I didn't cook the potatoes beforehand. It worked out wonderfully, with the curry-broth soaking all the way into the potatoes. YUM! I used regular rice because that was on hand, but I strongly suggest using jasmine or long-grain rice!

Bah! Meat doesn't soak up curry sauce as well as potatoes. (Though yeah, this time I made it, I used too many potatoes.)
